Orange Flavoured Chocolate Chip Pancakes

I love desserts as much as the next person. Pancakes are a basic to me. Its like making eggs in the dessert world, its oh so simple. I’ve had pancakes that are dry, burnt ect, but learnt a way to make them fluffy, moist and sweet. Through trail and error of course. I’m going to share with you a simple recipe to make them but with a twist. You will need:

  • Self Raising Flour.
  • 1 1/2 Tablespoon of sugar (any of your choice).
  • 2 Teaspoons of butter.
  • Warm milk.
  • 1 Orange.
  • 2 Eggs.
  • Chocolate Chip.
  1. First crack the eggs. Do this on a flat surface as cracking it on the side of the bowl can lead to shells falling into the mix. Add the butter and sugar, then stir. It can be done with a whisk or even a fork.
  2. Add a little bit of the warm milk to dissolve the butter. Add the flour little by little while mixing until the mixture is tough this is where can add more milk to smoothen it out. once you have a thick. smooth texture, finely grate a 1/4 of the orange skin into the mixture and add the chocolate chips. Then mix it in. you can cut up the orange and squeeze the juices into the mix if you really want a strong orange taste.
  3. Get a non stick pan and place it on medium heat. once hot reduce the heat a tad and then poor the mixture into the pan and spread evenly. you will the start to see bubbles form. once that happens flip your pancake. Afterwards cook it on each side for a minute or two. Now they are ready to be served.

Its totally up to you what you want to serve it with. I usually just have it with tea, berries or sometimes ice cream. The possibilities are endless. you could always try out different stuff I even used food colouring once came out pretty good. so give it a go.
