Chicken and Potato chickpea Curry

Indian food has to be in your top 5, come on the array of flavours to decipher from. It’s like a flavoursome party in your mouth and all the Roti’s are invited. LOL. No seriously though, their dishes are world renown and loved by many. From the Gara Masala, Turmeric with great health benefits, to the all loved Curry Powder. This dish was inspired by my Asian friend and her father, his food is to die for. So here is a simple Curry Dish for you to try out.
Best to get everything prepared first. Was the chicken, chop what needs to be chopped and have all your seasoning on deck.

You will need.

½, Onions

2, Garlic Gloves

1 tspn, Paprika

1 tspn, Curry Powder

1 tspn, Mild Madras  Curry Powder

1 tspn, Thyme

1 tspn, Cyan Pepper

1 tspn, All-purpose Seasoning

1 tspn, Salt and pepper

1 tspn, Turmeric

600g, Chicken

400g, Chopped Tomatoes

Handfull of Parsley

200g, Chickpeas

1/2,  Cup of water

2 tbsp, Olive Oil

Method

1. Add oil to a pot on medium heat. Once hot add the onions and garlic and stir for 2 min. Then once browned add the seasoning (Thyme, paprika, Cyan Pepper, Curry Powder, Mild Madras Curry Powder, All-Purpose). Stir for another 2 min on a low heat, place the chicken and Potatoes into the pot. Turn the heat up a little, stir for 5 min or so until the chicken has cooked all round (you will see some color on the chicken ).
2. Add the Chopped Tomatoes, Chickpeas pour in a 1/2 cup of water, stir and turn the heat up till it boils a little. Throw in a tspn of Turmeric Powder, Salt and Pepper. Turn the heat down and leave to simmer for 20min on a low heat. Once that has passed throw in some parsley(you can also use coriander) and leave on a low heat for 5min.
3. Serve with either type of rice (Turmeric, Coconut, Pilau etc.) or Chapati/Roti. Either one is a great choice, but why not be greedy and serve with both.
