I cannot stress how easy it is to make most pasta dishes. There’s this huge misconception due to advertisement companies and dietary books stating people should decrease the number of carbs they eat. As we all know a lot of energy within our diet comes from carbs. Looking into diet and nutrition ‘Complex Carbs’ are what is more ideal for people as it provides more fiber and vitamins compared to ‘Simple Carbs’. Whole grain foods are a great source of ‘Complex Carbs’, so swap your normal pasta for some whole grain pasta. Another wonder food to think about, probably something that has been drilled into our heads from a young age is spinach. I would accompany every meal if I could with this superfood. The health benefits it has is overwhelming, whether raw or cooked. Anything green is just good for you, it’s safe, hence the green color. Once you have adopted this style and you familiarise yourself with the methods you can work with other vegetables or even try roasting them.
Once again I’m all for budgeting so don’t think this will cost you allot. Serving for two will probably come to £7 pound. If you wanted to add fish, poultry or meat it would then be around £9-11. Which is not bad since a meal for two would be around £20+ not including the wine if you were to eat out. Cooking is always the best way when it comes to eating. especially as it increases a basic human skill as well as saving time, energy and money. Ingredients aren’t much at all, you will need.
You need
1 Handfull of Spinach
500g, Pasta (Vegan)
1/2, White Onion
1/2 cup, Green Pesto
2 – 3 tbsp, Double Cream (Vegan)
80g, Parmesan Cheese (None vegan option)
75g, Mushrooms
Salt and Pepper
1 tsp, Unsalted Butter (Vegan)
1 tbsp, Mixed herbs
2 tbsp, Olive Oil
Method
- Chop and slice anything first (mushrooms, spinach and onions)
- While chopping up some of the ingredients heat the pot over a medium heat (Add the oil and throw in the butter). Also, have a pot of salt water boiling.
- Once it has boiled add in the pasta and leave for around 7-8 min. (Add some oil or a little butter to stop the pasta from sticking to the pot)
- When the pan is hot just before the butter goes brown add the onions, mushrooms, Mixed herbs and stir for a little while. (reduce the heat a little)
- At this time the onions and mushrooms should have gained some colour add in the spinach and pesto sauce and reduce the heat to a low level.
- The pasta should be ready by now, so drain the pasta but leave a little of the pasta water and add it to the pot. (1/3 cup should be ok) Add the pasta to the pot and add the cream.
- Raise the heat to a medium level, stir and leave to simmer for 3 min. Season with S&P (Salt & Pepper) then serve with a sprinkle of parmesan cheese.
Depending on how creamy you want it or however much you love spinach you can always adjust it to your liking. For all none vegans you can just use normal products instead of the vegan options.
