Not to get confused with the Asian film. This is just a simple Indian lentil soup. A very super easy recipe to make. It tastes amazing. Having a Kenyan background, there is a large presence of Asian culture and people living their, so it was just natural for me to grow up with such foods. Chapati being my absolute favorite.
This has great nutritional value, low in cholesterol and high in protein. Like most beans meat doesn’t always have the most protein. Allot of veg and beans provide a much more higher intake regarding protein. Also being perfect for a vegan diet you can’t go wrong with a lentil soup. You can eat it with anything but roti/chapati is always a winner.
You’ll need
1 tsp, Ground Cumin
2 tsp, Cumin seeds
1 tsp, Garamasala
1 tsp, Turmeric
1/2 tsp, Black Mustard seeds
2 garlic cloves
1/2 onion
400g, Chopped tomatoes
1 tsp, Salt
1 tsp, Pepper
Handful of Coriander
1, Carrots
1, Peppers
1 cup, Red lentils
100g, veg stock
2 tbsp, veg oil
Method
- Soak the lentils in cold water, finely chop the onions and garlic. Chop the rest of the vegetables.
- Boil the kettle and heat up a pot. Once the kettle has boiled add some of the water to the veg stock cube inside a bowl.
- Once the pot has warmed up, add the oil, onions and garlic but do not cook till they color. (Cook on a low heat)
- Add the seasoning (garamasala, Cumin seeds, Ground Cumin, mustard seeds) after the onions are soft (this should take around 2min), along with the rest of the vegetables and stir occasionally for 4min.
- Once that has softened up, add the drained lentils, stock and chopped tomatoes. Leave for 20min on simmer then add the chopped coriander, salt, pepper and turmeric.
- Serve with whatever you fancy. (if still a little runny leave to simmer a little longer)
