Ok ok let’s get all the jokes, laughs and memes about this out of our heads. I don’t know any other veg that has got limelight for the wrong reasons. Well I guess there is some if think outside the box.
Apart from being an emoji used in dirty texts nowadays, this vegetable is actually an intense antioxidant, substantial source of dietary fibre, exceptional protector of fatty acids for healthy brain function, B1 and B6 vitamins. Great to use in salads, stews, grilled, baked. Very diverse it’s great to use. Most purple fruit and veg are great antioxidants.
This recipe is simple, easy and Vegan friendly, just don’t add the butter stick to the oil. With lent here try this out, plus Its looking after your pockets just as much as your health, can’t get any better than that.
You’ll need
2, Aubergine
300g, Chopped Tinned tomato
210g, Butter Beans
1 1/2 tsp, Gara Masala
1 tsp, Cayenne Pepper
1 tbsp, Butter
2 tbsp, Sunflower Oil
1 1/2 tsp, Turmeric
1 tsp, Grounds Cumin
1 tsp, Mustard Seeds
Handful of Parsley
1 Small Onion
2, Garlic cloves
400ml, Coconut milk
80ml, Veg stock
Method
- Heat up a large pot on a medium low heat. Cut the aubergines into large pieces. Dice the onion, crunch the garlic cloves (use a garlic crusher), put all dry ingredients on a plate or very small bowl apart from the turmeric add this later.
- Add oil in the pot once hot (hold your hand fairly closely over the pot to see if you can feel the heat), throw in the onions along with the garlic. Sweat them down (cook them without colour) then add in the dry ingredients along with the aubergines. Stir occasionally for around 5 min or so till you can see most of the aubergines are getting soft.
- Add in the chopped tomatoes as well as the veg stock. Bring up to a boil, add in the butter beans, coconut milk, turmeric, salt and pepper. Stir, leave it to boil for 2min, then leave to simmer for 20min.
- Finish of with the chopped parsley or if you prefer you can use coriander.

Made this for the family last night. Definitely big enough to fill a family of 5 with some leftovers. Everyone loved it! It was super quick and easy to make but most importantly it was delicious and wholesome. Thank you for the recipe.
