I’m all about less is more and a pasta enthusiast. How could you not be its top tier comfort food. With this recipe it is sooooo simple and easy you honestly could not fail. If you would like, you can add some protein to the dish, but nothing else really as I think it will take away from the simplicity away from the dish.
So I set myself a pasta challenge this weekday, to create a new pasta dish every day. From new kinds of pasta to various ingredients and methods. Creamy pasta dishes, tomato-based dishes, my take on classic dishes etc. I found it very rewarding and interesting as it pushed me out my comfort zone more. I came into contact with numerous pasta I’ve never had and easily overlooked in the stores and restaurants. ‘Campanelle’ is one of them. This is perfect for absorbing sauces.
I personally used Linguine, Campanelle, Farfalle, Rigatoni & Fusilli. I hope this also expands your interest to want to try new pasta or experiment more. This recipe yields for one person.
You’ll need
30g, Parsley
3 Garlic Cloves
1 Tsp, Chilli Flakes
80gPasta
4 Tbsp, Olive oil
Salt
Pepper
1 Mushroom
Method
- Prepare mid en place. Boil water in a pot and place the pasta in once reached boiling point. Add salt before this process (salty as the sea).
- In a pot heat up olive oil on a low heat add the garlic & mushrooms. Add some pasta water (you could use wine also or veg stock) to emulsify and make a type of Sauce which will cost the pasta.
- Once pasta is done, drain and add to the pot along with chillinflakes and the chopped parsley. Season and stir.
- Serve and enjoy. At this point you can add your cooked protien of choice at the end.
