Blueberry Salad Recipe: A Light and Fresh Salad Perfect for Summer

As summer has been giving us great weather not to forget the record-breaking heatwave. I don’t know about you, but when it’s hot I eat less. But naturally, the body would want to eat less due to heat-generating functions. Eating is one of those functions. Nonetheless, it doesn’t still mean you can’t eat well. One of the best things to eat in hot weathers is fruits, vegetables and salads. Anything Light.

If you may not know from previous posts. I have a sweet tooth, so I’m always trying to incorporate a sweet taste into my dishes where I can. I’ve been intrigued with the concept of fruit with savoury food especially when my aunty introduced me to fruits in a salad. So to me why not try blueberries. Full of antioxidants and other health benefits I think this is a very perfect fruit to use. So hope you also like it and feel as refreshed as I did.

This serves 2 people

You’ll need

300g, Mixed Leaf Salad

1, Avocado

2 Small Beetroots

50g, Blueberries

Dill

4 Tbsps, House dressing

Black pepper (crushed)

Method
  1. Wash all fruit and veg, and leave to dry on a kitchen towel.
  2. Chop the beetroots to your desired shape (I used cooked beets). I chopped in jullians (strips). Blueberries in half & avocado im thin slices.
  3. Mix the house dressing (crushed garlic, coriander olive oil, lemon juice, red wine vinegar, salt and pepper) with the mix leaf salad and blueberries in a bowl. Make sure everything is coated not drenched.
  4. Then place in a plate of your serving, top it off with the sliced avocados , beets and black pepper. You can add some more dressing if you like or olive oil.
  5. You can add some protein of your choice but I would suggest smoked salmon or any salmon to go with this salad as It complements it very well.
