This South American phenomenon, I was shocked how simple it is to make. That’s something that probably stops allot people from trying new things, the false perception. One of the comfort foods thats crazed the world with its flavours and street food simplicity. Like Taco Tuesday this would be a great accompaniment as it is similar in texture flavour but just with a difference. In other words a tortilla sandwich. I say that respectfully please don’t cancel me my Latino and Latin x community.
Made for all, vegans, pescatarians, meat eaters vegetarians also gluten free. No one is left out of this dish. With summer around the corner and approaching, festivals, beers in the sun. This is an absolute banger amongst friends and family. Not too heavy and packed flavour. Can be messy, but foods that are messy are usually the best, no???
400g, Red Kidney Beans
400g, Chopped Tinned Tomatoes
2 Tspn, Tomato Purée
2 Garlic Cloves
1/4, Garlic & Onion Powder,
1/4, Chilli Flakes
200g, Chicken Breast
100g, Veg Stock
2 Bay Leaves
1 Red Bell Pepper
5, Tortilla Wraps
- Chop and prepare ingredients (chicken, peppers, onions & garlic) Once ready heat up a pan or pot. Add in the oil and sear the chicken then take out. Add in the onions, garlic and peppers. Stir for around 2-3min once onions and garlic form colour.
- Pour in the dry seasoning, stir and add the tomato paste, kidney beans, bay leaves, chicken and chopped tomato. Stir and then add in the veg stock. Turn heat up until boiling point (stirring occasionally), once reached. Season and leave to simmer for around 30min.
- Stir time to time and check that chicken is soft. Once done place to the side. Grab a frying pan and heat up, once heated up on a medium heat (lubricate with a little oil) add your tortilla wrap flat and add the chicken filling. This should be close to the middle for when it folds it’s spreads evenly. You can also add cheese at this point, once done you can fold and allow to cook for 2min on each side.
- Now serve and enjoy, this can be also serves with salsa, guacamole, sour cream.
